Vineyard and terroir
The Negroamaro comes from a flat, 1.00 ha vineyard in the Manduria countryside at 90 m above sea level. The clay-and-limestone soil carries Guyot-trained vines grafted on 161.49 C rootstock. Planting density is 9,000 vines per hectare, at 1.40 × 0.80 m spacing, with four to six buds per plant. Average yield is 800 g per vine.
Grapes
100% Negroamaro.
Vinification
The grapes are picked manually during the second ten days of August, placed in plastic cases after careful bunch selection and transported in a refrigerated truck. At the winery they pass over a sorting table before destemming and gentle crushing. Cold pre-fermentative maceration takes place in a 70 hl stainless-steel tank, with 12 hours of skin contact. Following fermentation, the wine is transferred immediately to French oak barriques.
Ageing
After approximately seven months in wood, tirage takes place. The wine then spends around 48 months on the lees before disgorgement and approximately another 12 months in bottle before release.

Described as “Simona in liquid form,” SN is Gianfranco’s tribute to Simona Natale, his partner in life and among the vines, and to her longstanding passion for sparkling wine.
