Vineyard and terroir
The Nebbiolo comes from the "Bricco delle Viole" vineyard, where the vines were planted in 1964.
Vinification
Harvest is entirely by hand, when the grapes reach optimal ripeness, usually from mid- to late October. The grapes are placed in 20 kg crates and taken straight to the winery. After destemming and crushing, maceration and fermentation take place in stainless steel tanks for 14–21 days. Malolactic fermentation takes place at a controlled temperature of 20 °C.
Ageing
The wine ages for 46–50 months in untoasted, truncated cone-shaped oak vats, followed by additional time in stainless steel tanks before bottling.
