Vineyard and terroir
The grapes are hand-harvested during the first two weeks of October from the Perno vineyard on the Santo Stefano hills in Monforte d’Alba and from other vineyards in Castiglione Falletto.
Vinification
Traditional vinification includes a fermentation lasting 15–20 days.
Ageing
The wine matures for two years in medium-sized Slavonian oak barrels.
