Vineyard and terroir
The grapes come from various plots in Contrada Graffetta, covering 4 ha in total. The south-facing vineyards stand at an average elevation of 40 m a.s.l. and have fertile, generous soils rich in marine limestone. Warm, dry and windy conditions are moderated by the nearby sea. Abundant sunlight supports prolonged, complex ripening and contributes to the wine’s structure and extraction.
The vines are eight years old, with a planting density of 6,500 vines per hectare and an average yield of 1 kg per vine. Both spur and cane pruning are used.
Grapes
30% Cabernet Sauvignon, 30% Cabernet Franc, 20% Syrah and 20% Petit Verdot.
Vinification
Harvest takes place from late September to mid-October. Maceration lasts 10–12 days at approximately 28°C, and malolactic fermentation occurs in stainless steel.
Ageing
Six months in tonneaux are followed by a further six months in bottle.
Technical data
Annual production is approximately 50,000 bottles.
Tasting profile
Intense and dense in colour. The bouquet combines ripe red fruit with nuances of leather. The palate is full-bodied and velvety, ending with a soft, juicy finish.
Serving and pairing
Serve at 16°C with grilled meat or mature cheeses.
