Vineyard and terroir
The grapes are grown in Collio. The Ca' Ronesca estate lies on the Italian-Slovenian border and has around 60 ha of vineyards surrounded by nearly 60 ha of woodland. Of its vineyard area, 37 ha are in Dolegna del Collio, while a further 20 ha encircle the hill of Ipplis. The vines occupy steep and gentle east-facing slopes among chestnut, oak, acacia and juniper trees. Centuries-old cypress trees also grow abundantly around Ipplis.
Vinification
The grapes are harvested by hand and crushed, then divided into two portions. The first undergoes eight hours of maceration at 15–16 °C; the second macerates for 15 hours at 8 °C. After gentle pressing, the must is allowed to settle. Fermentation lasts two weeks at a controlled 17–18 °C.
Ageing
The two portions spend six months on the fine lees in stainless-steel tanks and are blended the following spring. The wine is then filtered and bottled, followed by one month of further maturation.
