Vineyard and terroir
The estate vineyards lie on southeast-facing slopes at 250–500 m in Alto Adige. The vines grow exclusively in light gravel soils with a high proportion of dolomitic limestone. The Alps shelter the area from cold northern air masses, while warm, humid air from Lake Garda and the Mediterranean Sea influences the climate. Warm days and cool nights support aromatic development. Yields are limited to 70 hl/ha to concentrate the fruit.
Vinification
The grapes are harvested at optimal ripeness, then sorted and pressed. Fermentation takes place in stainless-steel tanks at a controlled temperature.
Ageing
The wine rests on its fine lees in large oak barrels, developing greater complexity and concentration.
Tasting profile
Fresh and spicy, with a long, slightly salty finish.
Label / history
The name “Caliz” combines the Latin words “Calix,” meaning “cup,” and “Calx,” meaning “chalk,” referring to the vineyard soils.
