Vineyard and terroir
The Pinot Grigio grows on steep slopes at 550 m above sea level. The soils are mainly sandy with a high gravel content. Yields do not exceed 7,500 kg/ha.
Vinification
Only ripe, healthy grapes are selected and gently pressed in a pneumatic press. 80% of the must ferments in temperature-controlled stainless steel tanks. The remaining 20% ferments in oak barriques and then undergoes spontaneous malolactic fermentation.
