Vineyard and terroir
The Cortese grapes grow in the tuff- and limestone-rich soils of Gavi.
Vinification
The grapes are harvested by hand, usually from mid-September. Whole bunches are gently pressed in a latest-generation Bucher Inertys press, which helps prevent oxidation and retain the grapes' bright aroma. Fermentation takes place with selected yeasts at around 18 °C in stainless steel tanks. Vinification is gentle, and steel tanks are used to preserve the variety's natural character.
Ageing
The wine is aged on its fine lees with gentle stirring. After bottling in the spring of the following year, it matures for a further 2-4 months in the winery's cellars.
