Vineyard and terroir
The selected bunches come exclusively from the approximately 3.8 ha Prea vineyard, situated at 560–610 m above sea level. Marked day-to-night temperature differences at this altitude allow harvesting to continue until late October. The vineyard name means “stone” in the Veronese dialect, referring to its marly-calcareous soil, which is particularly rich in rocky material of Cretaceous origin.
Grapes
Garganega, Pinot Bianco and Chardonnay.
Vinification
The best bunches are selected and harvested by hand. The grapes undergo gentle whole-bunch pressing, followed by fermentation in concrete tanks at a controlled temperature of 16–18°C.
Ageing
The wine matures for two years between concrete and Clayver vessels, followed by a further six months in bottle.
Technical data
Bianco Verona IGT. Alcohol: 13% vol. Available format: 0.75 L.
Tasting profile
Bright straw yellow with golden highlights. The layered bouquet combines white pepper and medicinal herbs with exotic fruit and white flowers. The palate is full and fresh, showing ripe-fruit notes and well-integrated acidity. Calcareous-soil minerality and acidity give the wine vibrancy, notable length and persistence.
Serving and pairing
Its mineral and acidic profile suits elaborate dishes such as baccalà mantecato, risotto alla Milanese, duck breast and foie gras. It can also accompany Asian dishes that work well with savoury, mineral wines.
Label / history
“Prea” means “stone” in the Veronese dialect and takes its name from the stony, marly-calcareous vineyard soil.
