Grapes
A blend of Corvina, Corvinone and Rondinella.
Vinification
The bunches are picked by hand during the second ten-day period of September. They dry in a fruttaio for approximately 100 days, losing around 40% of their original weight. The dried grapes are destemmed and gently crushed, then fermented in stainless-steel tanks at 15–20°C. Fermentation lasts 25 days and includes periodic daily pump-overs.
Ageing
The wine matures for 24 months in French oak barriques and tonneaux, followed by 6 months in bottle.
Technical data
Amarone della Valpolicella DOCG. Alcohol: 15% vol. Available formats: 0.75 L and 1.5 L.
Tasting profile
Dark, bright garnet red. The complex bouquet begins with sour cherry and preserve, developing toward spice and a delicate leather note. Full and enveloping on the palate, it combines strength with refinement and closes with a long, balanced finish.
Serving and pairing
Pair with stewed or grilled game, braised meats and sweet-and-sour cuisine.
