Vineyard and terroir
The grapes come from the commune of La Morra in Piedmont. The vineyards lie at 350 m above sea level and face southeast. The vines are 25–30 years old and grow in limestone soils with some marl. Yields do not exceed 60 hl/ha. The climate has cold winters and hot summers, which allow the grapes to develop concentration and bright flavour.
Vinification
The grapes are harvested only when fully ripe, in mid-September, and taken straight to the cellar to preserve freshness and fruit-forward character. They are destemmed and gently pressed. Alcoholic fermentation runs without added yeast in stainless steel tanks at 25–28 °C for 1–2 weeks, followed by malolactic fermentation.
Ageing
The wine ages in stainless steel tanks for 6–9 months, then rests at least a further 6 months in bottle, becoming more balanced and smooth.
