Vineyard and terroir
The vines, some more than 60 years old, grow on the hills of Rovereto di Gavi, in the commune of Gavi in Piedmont. The terroir lets Cortese show its full potential, giving wines valued for minerality, intensity and elegance.

Vinification
The grapes are harvested entirely by hand. Traditional winemaking methods are combined with modern technology. The wine is made sur lie, staying in contact with the lees until bottling, which adds complexity and reduces the need for sulfites.
Tasting profile
Remarkably fresh, with a delicate bouquet and a fruity, pleasantly crisp taste. Distinctive and easy-drinking, with a memorable aroma.
Serving and pairing
Suited to aperitif service, and to roasted trout with pear and ginger, fish curry with coconut and lime, vegetable dishes and low-fat cheeses.
Label / history
Named after Valentino Sartore, a general of the Kingdom of Savoy who lived for several years on the historic lands of Rovereto di Gavi.
La Scolca was founded in 1919 by Giovambattista Parodi. The estate covers 50 ha high in the Ligurian Apennines. His son Alfredo planted the first vineyard shortly before the Second World War, originally for simple homemade wines. Vittorio Soldati, of the third generation, recognised the land's greater potential and focused on white wine. Cortese's potential emerged when it was taken seriously, with minimal yields per vine and an established ideal ripeness. The first bottle of Gavi was released in 1950.
