Vineyard and terroir
The approximately 15-year-old vineyards undergo two rounds of bunch thinning, with harvest taking place at the end of September. The fruit is selected again in the cellar before traditional processing. Vines are trained to a balanced bilateral cordon on mixed clay soil rich in skeletal material.
Grapes
100% Sangiovese Grosso.
Vinification
The early stages of fermentation emphasize intensive extraction. This is followed by a long, undisturbed maceration on the skins. The temperature rises to a maximum of 33°C and remains elevated until racking.
Ageing
The wine matures for 36 months in large Slavonian oak barrels, followed by 12 months in bottle.
Technical data
Alcohol: 14.5%. Annual production: 12,000 bottles.
Tasting profile
Intense ruby red with garnet highlights. The complex bouquet combines cherry and currant with earth, leather and tobacco, while the broader description adds plum, chocolate, cedar and toasted oak. The full-bodied, layered palate is fresh, elegant and balanced, with lively acidity, formidable tannins and a ripe finish. A published critical description also notes floral delicacy, mint and liquorice, followed by a gentle, harmonious finish.
Serving and pairing
Serve at 18°C in a balloon glass. Pair with braised meats, slow-cooked ragù, aged cheeses and richly structured dishes.
