Vineyard and terroir
The fruit comes from the “Saomi” vineyard in the small village of Bigolino, at 176 m above sea level. The site has gravelly deposits and a distinctive microclimate. The River Teva rises in the Cartizze area and carries clay deposits downstream, contributing to the land’s particular qualities. The vines average 15–20 years of age.
Vinification
The grapes are harvested in early September at optimal ripeness. At the winery, only fruit that is not fully ripe is selected and gently pressed, without hard pressing. Secondary fermentation lasts four weeks at low temperature to emphasize acidity.

An elegant sparkling wine with pronounced acidity.

Suitable as an aperitif and with fish, seafood, or fresh pasta with vegetables.
Label / history
The name “Saomi” derives from “sagome,” a geographical name for an area once divided into small islands washed by the River Teva.
