Vineyard and terroir
The grapes come from hillside vineyards in the Monte Vulture area around Venosa, Basilicata, at 350 metres above sea level. The vines were planted in 2000 and are trained on an espalier system, with double Guyot pruning and a density of 3,300 vines per hectare. The approximately 10-hectare estate has loose, dry volcanic soils of good structure: essentially tufaceous, characteristically pozzolanic in color and rich in minerals.
Grapes
Aglianico del Vulture.
Vinification
Harvest takes place by hand into crates during the first ten days of September, at a stated yield of 100 quintals per hectare. After destemming, the grapes are gently pressed and only 50% of the free-run must is extracted. Fermentation begins with indigenous yeasts, without added sulfur dioxide. A second fermentation occurs in bottle through the action of residual sugars and yeasts, following the ancestral method, with no subsequent disgorgement.
Ageing
The wine remains on its lees in bottle throughout winter and is released without added sulfites. Bottling takes place in November.
Technical data
