Questo vino
Vineyard and terroir
The grapes come from the company's vineyards in Mezzane di Sotto, Valpantena and Valle d'Illasi. The soils are clay-limestone. The vines are 10 to 15 years old and grow at more than 200 metres above sea level.
Grapes
The wine blends Corvina, Corvinone, Rondinella, Croatina and other grape varieties.
Vinification
Selected grapes are harvested by hand in the first ten days of October, then destemmed and pressed. Fermentation is temperature-controlled, with regular pumping over, and lasts 12–15 days. Amarone pomace is then added to the young wine and triggers a second fermentation of the must, following the Ripasso technique. This gives the wine greater depth and a richer, more complex flavour.
Ageing
The wine ages for 24 months in 500-litre French and American oak barrels, followed by a further 8 months in bottle.
Tasting profile
A classic red with a rich, full flavour.
Label / history
The wine is named "Ciliegi".
