Grapes
Corvina and Corvinone make up 70% of the blend and give good acidity and aroma. Rondinella, Syrah and Sangiovese add deep colour and richness.
Vinification
The fully ripe grapes are harvested in the first half of October. Some are placed in small crates and taken to special drying rooms for appassimento, which significantly raises the grapes' sugar levels and helps them develop new aromas and a rich, deep flavour. After gentle pressing, the grapes are macerated and then fermented at a controlled temperature for 12–15 days, with frequent pumping over.
Ageing
The wine is aged in 350-litre oak barrels for 12–15 months, then rests in bottle for six months in the winery's cellars. It can be stored for at least 6 years.
Tasting profile
Well structured and full-bodied, with bright aromas and an elegant palate.
Label / history
The wine is labelled "Campo Prognai".
