Vineyard and terroir

The fruit comes from high in the mountains, where cool Alpine air meets the warm influence of the Adriatic. This contrast gives a long, even ripening season, which lets the grapes keep their freshness while developing depth.

Grapes

A blend of Merlot, Cabernet Sauvignon and the rare native Refosco.

Vinification

Each variety is harvested by hand at ideal ripeness in the second half of September and vinified separately. Alternating punch-downs, délestage and pump-overs extract colour and tannins. Gentle pressing follows, then malolactic fermentation in stainless steel tanks.

Ageing

The wine spends 6 months on the lees in 25-hectolitre barrels, which give roundness and subtle woody notes. After blending it rests for one more month before bottling.
