Vineyard and terroir
The selected fruit comes from the eastern hills of Friuli, where a continental climate and mineral-rich Flysch rock soils, locally known as Ponca, contribute to its rich flavour.
Vinification
The ripest bunches are selected in the vineyard and usually harvested by hand during the first week of September. They are pressed whole, with only the first-press juice—50% of the total volume—retained. After settling overnight, fermentation begins in stainless-steel tanks and finishes in 300-hectolitre French oak barrels, 30% of them new. Half of the wine undergoes malolactic fermentation.
Ageing
The wine matures in wooden barrels for 10 months, followed by two years in bottle in the winery’s cellars before release.
