Vineyard and terroir
The wine originates from rich, fertile soils along the Isonzo River and is produced organically.
Grapes
It is made from the fungus-resistant Cretos, Ritos and Roseli varieties.
Vinification
The grapes are harvested by hand and destemmed, followed by a brief cold pre-fermentation maceration. After settling, each variety ferments separately in temperature-controlled stainless-steel tanks. The lots are blended before bottling.
Ageing
The wine rests for several months on its fine lees, with regular bâtonnage.
Label / history
Fysi means “nature” in Greek.
