The grapes come from Finca El Paraíso, at an average altitude of 720 metres. The vines average 30 years of age.

Vinification
White grapes are made in the orange-wine style by fermenting and macerating them with their skins and seeds. The fruit is harvested manually and destemmed. Fermentation takes place with selected yeasts in 2,000-litre French oak vats at a controlled 16–18°C.
Ageing
The wine remains with its skins for 3 months in French oak vats. It then spends another 3 months without skins in clay amphorae, in contact with the lees, before gentle filtration and bottling.
Technical data
2025: 13.3% alcohol, pH 3.2, total acidity 6.3 g/L and residual sugar 2.3 g/L. Ageing potential is 4 years.
Tasting profile
Pale orange with bright copper highlights. Orange blossom, fresh honey and orange peel are joined by a fennel-like herbal nuance. The palate balances acidity with fresh fruit and is lively, direct and expressive. Its slightly incisive but agreeable texture is supported by good body and some unctuousness, leading to a persistent finish.
