Vineyard and terroir
The fruit comes from El Peral in Valle de Uco, at 1,050 metres above sea level. The vines average 20 years of age.
Grapes
100% Semillón.
Vinification
The grapes are picked by hand and the bunches selected before whole-bunch pressing at less than 1 bar. The must settles for 24 hours at 8°C. Fermentation begins at a controlled 14–16°C; at a density of 1.075, the wine is transferred to new 225- and 500-litre French oak barrels to complete fermentation.
Ageing
The wine remains in the same barrels for 7 months. During the first 4 months, bâtonnage is performed twice weekly to keep the wine in contact with its lees and build texture and creaminess. It is gently filtered before bottling.
Technical data
2024: 13.6% alcohol, pH 3.2, total acidity 6.6 g/L and residual sugar 1.8 g/L. Ageing potential is 8 years.
Tasting profile
Bright yellow with green highlights. Fresh green apple and peach lead the aroma, joined by subtle citrus, orange blossom, creamy nuances, nuts and delicate smoke. The palate is smooth and silky, with an enveloping texture and a suggestion of sweetness balanced by lively acidity. It has good volume and persistence, finishing clean and fresh, with clear varietal structure even in youth.
