Vineyard and terroir
The grapes come from Finca El Paraíso in Maipú, Mendoza. The vineyard stands at 780 metres, and its vines average 30 years of age.
Grapes
100% Gewürztraminer. The late-harvest fruit begins to dehydrate, naturally concentrating its sugars.
Vinification
The 2025 grapes are picked manually at 28° Brix, destemmed and subjected to manual berry selection. Pressing incorporates four to six hours of maceration. Fermentation proceeds with selected yeasts in stainless-steel vats at a controlled 16°C. Once the ferment reaches 12.0–12.5% alcohol and 60–70 grams of sugar, cooling stops alcoholic fermentation. The wine remains on fine lees for four months and is gently filtered at bottling.
Ageing
Four months on fine lees, without oak-barrel ageing.
Technical data
The 2025 vintage has 11.60% alcohol, pH 3.35, total acidity of 5.78 and 79.5 g/L residual sugar.
Tasting profile
A sweet, late-harvest white with a bright yellow colour and golden highlights. Intense lemon-peel, pineapple and quince aromas combine with rose petals and lemon verbena to form an exotic floral profile. The palate is unctuous, expressive, fresh and full-bodied, with a direct character. Its long, approachable and balanced finish carries sweetness integrated by the relationship between alcohol and acidity.
Serving and pairing
Serve at 8–10°C. Ageing potential is ten years.
