Vineyard and terroir
The fruit comes entirely from high-altitude vineyards in the Uco Valley: 70% from Gualtallary at 1,200 metres and 30% from El Peral at 1,120 metres. Filos translates this mountain landscape into a Chardonnay shaped by clear fruit, minerality, tension and incisive acidity.
Grapes
100% Chardonnay.
Vinification
The grapes are harvested by hand in two stages. The first is an early picking designed to preserve a citrus-led profile, tension and firm acidity reminiscent of a sparkling-wine base. The second portion is picked two weeks later to build white-fruit and floral expression and Chardonnay texture.
Whole bunches are pressed, and the must undergoes cold settling before fermentation in 500-litre French oak foudres and barrels. The approach takes inspiration from classic Burgundian vinification.
Ageing
The wine remains for eight months on its lees in the same foudres and barrels used for fermentation. Lees contact contributes creaminess that balances its vibrant acidity. The final blend is then assembled and prepared for bottling, followed by 12 months in bottle before release.
Technical data
For the 2023 vintage: 12.6% alcohol, 8.30 g/L total acidity, pH 3.10 and 1.60 g/L sugar. Pablo Cúneo is the winemaker; Alberto Arizu Sr and Mauricio Gudiño are the agronomists.
Tasting profile
Yellow with greenish reflections. The pure, delicate nose evokes pineapple, citrus and orange blossom, joined by caramel and gentle toast from maturation. The palate is vibrant, tense and long, balancing acidity and fruit sweetness with the creaminess developed during lees ageing. Its overall profile centres on fruit clarity, freshness, minerality and texture.
