Vineyard and terroir
The 2022 wine combines 94% fruit from the Uco Valley with 6% from Luján de Cuyo, sourced at elevations between 1,000 and 1,200 metres. It honours Finca El Paraíso, the home of four generations of the Arizu family and a vineyard that served as a viticultural laboratory for important innovations in the estate’s history.
Grapes
Blend proportions vary by vintage. Latest published vintage (2022): 64% Malbec and 36% Cabernet Sauvignon.
Vinification
The grapes are harvested manually, after which the bunches are selected, destemmed and subjected to a second selection at berry level. Cold maceration lasts five days at 8–10°C. Maceration and fermentation take place in small oak vats and stainless-steel tanks, with gentle extraction through punch-downs and délestage.
After maceration, the component wines are transferred separately to oak vessels. Each barrel and lot is tasted during maturation to select the constituents of the final blend.
Ageing
The individual wines mature for 12–16 months. All the wine passes through 500-litre barrels and second- and third-use foudres made from French, American and Hungarian oak. Once assembled and bottled, the blend rests for at least another 12 months before release.
Technical data
For the 2022 vintage: 14.4% alcohol, 5.33 total acidity, pH 3.6 and 2.9 g/L residual sugar. The projected ageing potential is 30 years. Pablo Cúneo is the winemaker.
Tasting profile
Bright, deep purplish red. The nose is intense, balanced and elegant, with precise yet complex fruit expression. Fresh plum, blackberry and raspberry mingle with delicate thyme-like spice. The palate is elegant, full-bodied and fresh, combining integrated fruit and maturation notes with a precise, harmonious and smooth progression. The finish is persistent and reveals substantial cellaring potential.
Serving and pairing
Serve at 14–16°C.
