Vineyard and terroir
The grapes come from low-yielding vineyards, which give concentrated, high-quality fruit.
Vinification
Each variety was vinified separately, following cold skin maceration and static settling. Fermentation lasted 12 days. The Chardonnay fermented in large barrels, while the Friulano and Sauvignon Blanc fermented in stainless steel tanks.
Ageing
The wine spent 10 months on its lees, then a further 2 months in bottle after bottling.
Label / history
The wine grew out of many discussions and debates between David and Michele Luisa, who wanted to create a structured wine without losing freshness. The name "Desiderium" means "desire".
