Vineyard and terroir
The Sangiovese and Canaiolo Nero grow in Monticchio at 300 m above sea level.
Vinification
The grapes are harvested in several passes to select only the ripest bunches, then sorted by hand and crushed. Maceration and fermentation take place in temperature-controlled stainless-steel tanks for 25–28 days at approximately 26 °C.
Ageing
The wine matures for 12 months in 50 hl barrels and fine-grained oak barriques, followed by at least three years in bottle.
Tasting profile
The complex, layered nose and palate combine black and red berries with warm spice notes.
Label / history
The wine is produced only in the vintages selected as the best. Its name derives from the Latin “rubesco,” meaning “to blush,” here associated with joy and merriment. The label bears a bas-relief depicting the grape harvest and Perugia’s Fontana Maggiore, a fountain dating from the 13th century.
