Vineyard and terroir

Cassiano draws on selected red-wine vineyards at the Manincor estate, Seehof and Panholzerhof. The southeast-facing slopes overlook Lake Kaltern at 250–280 m. Powerful sandy-loam soils are interwoven with limestone gravel and glacial or morainal deposits.

Grapes

Blend proportions vary by vintage. Latest published vintage (2023): 35% Cabernet Franc, 35% Merlot, 9% Syrah, 8% Tempranillo, 7% Petit Verdot and 6% Cabernet Sauvignon.

Vinification

Each lot was vinified separately. Fermentation proceeded spontaneously with indigenous yeasts in wooden vats. Maceration lasted 10–20 days according to the grape variety, with an emphasis on finesse and elegance.

Ageing

The wine matured for 18 months in barriques, half of them new. The separate components were assembled only shortly before bottling.

Technical data

2023: yield 48 hl/ha; residual sugar 1.0 g/l; alcohol 14% vol.; acidity 5.1 g/l. Production comprised 25,770 bottles and 809 magnums. The wine is biodynamic, Respekt-BIODYN certified and vegan.

Tasting profile

Bright, intense cherry red. Ripe cherry, liquorice and wild herbs shape the bouquet. Smooth, ripe tannins create a harmonious mouthfeel, while fresh, tangy herbal notes carry through the finish.

Serving and pairing

Serve at 16–18 °C in medium-sized Bordeaux glasses. Decant only while young. Pair with game, well-seasoned roasted red meats and piquant or spicy hard cheeses. The optimum drinking window runs from 2026 through the end of 2034.

Vintage notes

The 2023 growing season brought a wet spring followed by a hot, dry summer and a favourable golden autumn. Physiological maturity, sugar and acidity reached an ideal balance, producing ripe fruit, a cool character and moderate alcohol. Harvest extended from late September to mid-October, with the six varieties picked in succession.
