Vineyard and terroir
Eichhorn comes from the Eichhorn Vineyard within Terlan Lieben Aich. The southwest-facing slope lies at approximately 300 m and has a mild, airy microclimate. Its poor, permeable soil consists of sandy weathered porphyry and displays the most pronounced mineral structure among Manincor’s soils.
Grapes
100% Pinot Blanc, locally known as Weissburgunder and called Pinot Bianco in the wine’s presentation.
Vinification
Part of the crop was gently pressed as whole clusters. The remainder was destemmed, macerated on the skins for several hours to gain aroma and structure, and then pressed. Fermentation proceeded spontaneously with the grapes’ native yeasts in wooden barrels.
Ageing
The wine spent one year on its fine lees in barrel, building fruit expression, minerality and complexity.
Technical data
The 2025 wine has 12.5% alcohol, 5.3 g/L acidity and 1.3 g/L residual sugar. Yield was 43 hL/ha. Production comprised 14,250 standard bottles and 218 magnums. The wine is biodynamic, Respekt-BIODYN certified and vegan.
Tasting profile
Bright, deep yellow. Ripe yellow apple and pear mingle with white flowers and a restrained wet-limestone mineral note. The palate is powerful and juicy, combining ripe fruit, delicate creaminess and dense structure. Lively mineral acidity supplies tension and balance, followed by a long, complex and fruity finish.
Serving and pairing
Serve at 8–10 °C. Decanting is strongly recommended, especially in youth, and Burgundy glasses are preferred. Pair with delicate fish, shellfish and crustaceans, vegetarian dishes or aromatic cheeses. The optimal drinking window is 2027 through late 2037.
Vintage notes
Warm spring weather followed early budbreak in 2025, producing rapid, even vine development and favourable flowering. July and August were sunny and warm without prolonged extreme heat, while regular rain maintained the water supply and supported steady ripening. September rain required close attention and rigorous selection. The white wines developed riper fruit, greater body and more suppleness than in the previous year while retaining freshness, vitality and mineral precision. Eichhorn was harvested before mid-September at 43 hL/ha.
Label / history
The name accompanies a wine presented through its different regional grape names: Weissburgunder locally, Pinot Blanc in France and Pinot Bianco in Italian. Its style combines vivid, floral Alpine traits with a long, aromatic Mediterranean character.
