Vineyard and terroir
The grapes grow on clay soils in Colli di Scandiano e Canossa. The vines are trained using the Cordon Speronato system and yield no more than 14 t/ha, below the limit permitted by the DOC specification.
Vinification
Ripe grapes are carefully selected and gently pressed. Following the first alcoholic fermentation, the base wine undergoes a second fermentation in temperature-controlled stainless-steel pressure tanks. Fermentation is stopped by cooling the wine to −3 °C once the desired sugar level has been reached. The wine is then stabilized at low temperature for 2–3 weeks before filtration and bottling.
Tasting profile
Fruit and berry aromas lead to a lively, fresh palate whose sweetness is not excessively sugary.
