Vineyard and terroir

Nebbiolo is grown on 1.05 ha in the Pajorè MGA at 260 m a.s.l., with south and south-west exposure. The vines were planted in 2010, trained to espalier and Guyot pruned. The fine, calcareous Typic Ustorthent lies on fossiliferous Sant’Agata Marls composed of variably sandy grey-blue marls with local sandy-conglomerate interlayers.

Particular air currents create a distinct microclimate and lead to earlier vegetative growth than in the neighbouring Montaribaldi MGA. Dedicated clonal material and detailed vineyard management further shape the cru’s vibrant personality and more pronounced tannins.

Vinification

The grapes are destemmed and crushed before transfer to temperature-controlled stainless-steel tanks. Alcoholic fermentation lasts at least one week at a constant 28–32 °C. Following racking and initial settling, the wine remains on its fine lees at 20–22 °C for at least two months and completes malolactic fermentation.

Ageing

The approximately 30-month ageing period includes time in traditional 2,000–3,000 L Slavonian oak casks. More than two years after harvest, the wine is bottled and then rests in the cellar for at least six months before release.

Tasting profile

Elegant yet vibrant, Pajorè has a firmer and more clearly pronounced tannic profile associated with the site’s microclimate and canopy development. The palate is powerfully structured but balanced, with well-defined, sophisticated tannins.

Serve at 18 °C with red meat dishes, roasts, game or aged cheeses.
