Vineyard and terroir

The vineyard is situated in the municipality of Neive at 220 m above sea level, with a south-westerly exposure. It was planted in 1985 at 4,400 vines per hectare. The vines are trellised and Guyot-pruned.

The geological formation consists of S. Agata fossil marls: grey-blue marls with varying sand content and local sandy-conglomeratic intercalations. The hillside soil is a fine, calcareous Typic Ustorthent. Grape yield is 8,000 kg/ha and wine yield is 5,200 L/ha.

Vinification

The grapes are harvested between late September and the first fifteen days of October. After destemming and crushing, alcoholic fermentation and maceration take place in temperature-controlled stainless-steel tanks for at least one week at 28–32°C. Following racking, the wine stays on its lees for at least two months at 20–22°C while malolactic fermentation is completed.

Ageing

Maturation lasts approximately 20 months and is partly conducted in new and once-used 225 L oak barriques. Bottling takes place two years after harvest. The stated subsequent cellar-ageing period differs between the available materials: at least four months in the wine description and at least six months in the technical sheet.

Tasting profile

Garnet red. The bouquet is enveloping and rich, with violet, cocoa, vanilla and tobacco aromas; the latter three are associated with oak maturation. The palate is full and persistent, with austere tannins that are neither bitter nor excessively drying. The style is characterised as elegant and long-lived.

Serving and pairing

Serve at 18°C with salami, red or white meat, and cheese.
