Vineyard and terroir
The vines grow at 300 m above sea level with western exposure. Their geological setting is the Lequio Formation, an alternation of variably cemented sandstones, sands and compact marls. The hillside soil is a fine, calcareous Typic Ustorthent. Planted in 2007, the vineyard has 4,200 vines per hectare and is trained to a vertical trellis with spur-pruned cordon. Grape yield is 9,000 kg/ha; the wine page also gives a wine yield of 6,300 L/ha.
Grapes
Chardonnay, Sauvignon Blanc and Arneis; proportions are not specified. The varieties are harvested and vinified separately.
Vinification
Harvest runs from late August into early September. On arrival, the grapes are destemmed, crushed and cooled to 10–13°C. Soft pneumatic pressing separates the skins from the must. The must settles for about two days in temperature-controlled stainless-steel tanks at 13°C, allowing sediment to separate. The clarified must then undergoes alcoholic fermentation at 13–18°C for roughly ten days.
Ageing
After fermentation, the wine is racked and left on its fine lees in stainless steel. The technical-features panel specifies a seven-month period in stainless steel under the heading of malolactic fermentation. The final blend is generally determined in the spring following harvest; after several rackings, the wine is bottled and released.
Tasting profile
Pale straw yellow with greenish highlights. The broad bouquet combines floral notes with tropical fruit. The palate is fresh and delicate, with good persistence.
Serving and pairing
Serve at 14°C with aperitifs and starters.
