Vinification
The grapes are harvested in September and dried in a well-ventilated room using the appassimento method. By the end of January, they have lost 35% of their weight, concentrating their sugars. Fermentation then takes place at a low temperature for approximately 30 days.
Ageing
The wine matures for 24 months in wooden barrels, followed by six months in bottle.
