Vineyard and terroir
The fruit comes from Veneto, northeast of Verona, on the hill separating Montorio from Valle d’Illasi. The vineyard holdings comprise 20 hectares under Guyot and 5 hectares under the traditional Pergola Veronese system, with plantings dating from 1995 to 2022. Il Perlar and Palazzina have limestone soils dominated by iron-rich red clay, while Monte del Drago has medium-textured, clay-rich tuffaceous ground. Planting density is 6,000 vines per hectare under Guyot and 4,500 vines per hectare under pergola. Yield is 2 kg per vine.
Grapes
50% Corvina and 50% Merlot.
Vinification
The must remains in contact with the skins for 12–15 days at uncontrolled temperature, with periodic pump-overs. The wine is then racked, completes malolactic fermentation and moves to cement.
Ageing
Maturation lasts six months in cement tanks.
Technical data
Alcohol: 12.04% vol. Total acidity: 5.35 g/L. pH: 3.35. Residual sugar: 1.80 g/L.
Tasting profile
Ruby red in colour, with fresh, intact fruit giving character to a medium-bodied style. It is pleasant served chilled.
