Vinification
The wine is sparkling and made by the Charmat method. After gentle pressing, the juice was filtered and clarified by cold settling. Primary and secondary fermentation both took place in special tanks.

The label carries a minimalist drawing of a bird, referring to the wine's name in Piedmontese dialect. "Pitule" is associated with birds pecking at berries in the vineyards.
