Vinification
The grapes are harvested late, at full ripeness or slight overripeness, to maximize aromatic concentration. After fermentation, the wine is fortified with grape spirit.
Ageing
The wine matures in stainless-steel tanks, followed by at least two months in bottle.
Serving and pairing
Suitable at the end of a meal, particularly with dried fruit, almond paste and traditional Italian sweets. It may also be paired with blue cheese.
