Grapes
Made from several Sangiovese clones.
Vinification
The grapes ferment in temperature-controlled stainless-steel tanks and macerate on the skins for 18 days before malolactic fermentation.
Ageing
The wine matures for six months in steel tanks, without oak influence, followed by eight months in bottle.
Tasting profile
Spicy, warming and refreshing, with delicate herbal and mineral notes on the palate. Its character is reminiscent of Burgundy wines.
Label / history
The wasp on the label symbolizes “Il Sangiovese.” Wasps are commonly seen in the vineyards and help preserve the area’s biodiversity.
