Vineyard and terroir
The Nebbiolo grows in the small village of Ca Veja, in the Rivoli area south of Alba. The vineyard has long produced Nebbiolo of firm character and has always stood beside an old building dating from the 16th century. A small column dedicated to Saint Bernard rises above the site, over the hillside vineyards. The vines are more than 30 years old and are farmed organically, without pesticides or herbicides, using only natural sulfur and copper compounds.
Vinification
The grapes are harvested by hand in the last week of September. After destemming and pressing, maceration and fermentation take place in stainless steel tanks and last 3–6 weeks.
Ageing
At the end of winter the wine is transferred to Slavonian oak casks about 15 years old, with capacities of 2,500 to 5,000 litres. It matures in them for at least one and a half years.
