Vinification
Maceration and fermentation take place together in stainless-steel tanks at controlled temperature for four days, followed by malolactic fermentation.
Ageing
The wine matures for 18 months in new, medium-toast French oak barriques.
Technical data
Annual production ranges from 2,666 to 8,000 bottles. The listed format is 750 ml.
Tasting profile
Deep ruby red. The bouquet combines earthy humus with softer blackberry-jam notes over an underlying spicy character, followed by chocolate on the finish. Hot vintages give more intense fruit, particularly blueberry and cassis. The palate is full-bodied, with soft, elegant tannins; in hot years it becomes deeper and more structured.
Serving and pairing
Serve at 18°C. Pair with pecorino cheese or beefsteak. In hot vintages, suggested pairings extend to duck, horse, deer and roe deer.
