Vineyard and terroir
The vineyards are situated in central Tuscany at 280 m above sea level, with south-east exposure. Their soils combine Pliocene sands and clay. The vines range from 5 to 35 years old and are trained using Guyot and spur-pruned cordon systems.
Grapes
100% Chardonnay.
Vinification
The grapes are soft-pressed after brief skin contact. Static clarification takes place at low temperature, followed by fermentation in stainless steel at 15°C for about 30 days.
Ageing
The wine ages on its fine lees for 60 days.
Technical data
Toscana IGT Bianco. Annual production is between 1,300 and 1,400 bottles.
Tasting profile
Pale straw yellow with greenish reflections, developing golden tones with age. The fine, intense bouquet evokes green apple, pear and white peach, followed by white flowers and delicate aromatic herbs. The palate is dry, fresh and taut, ending with a long, savory finish.
Serving and pairing
Serve at 10–12°C with fish dishes or white meats, or as an aperitif.
