Vineyard and terroir
Ansonica from the Tinaro and Pini vineyards in the Parrina production area, on clay and calcareous soils. Vineyard work reduces both the number of bunches per vine and the size of each bunch. The variety ripens later than the estate’s other white grapes and is harvested mechanically in the first days of October, once sugars and aromatic precursors have become concentrated.
Vinification
The grapes are cooled on arrival to protect their fruit character, then fermented in stainless steel at controlled temperature for 17 days at 17°C.
Ageing
Six months on noble lees in stainless-steel tanks, with daily bâtonnage. The closure may be a one-piece natural or technical cork.

Tasting profile
Light, bright straw yellow. The nose is intense, combining tropical fruit, acacia and aromatic herbs associated with Mediterranean scrub. The palate is lively and harmonious, with a soft texture and savoury, fruity accents.
Serving and pairing
Serve at 10–12°C. Suitable for fish dishes, particularly oysters, shellfish and carpaccio, and also for vegetable soups.
