Vineyard and terroir
The fruit comes from high-altitude vineyards in Bussia, situated at 280–300 metres above sea level on white silty marl soils. The vines are between 17 and 52 years old.
Vinification
The grapes are harvested by hand, carefully sorted and placed in small baskets. Following gentle pressing, they undergo a long maceration. Alcoholic fermentation begins naturally with native yeasts.
Ageing
The wine ages for 18 months in small oak barrels in contact with the lees. After bottling, it matures for at least six further months in cellars maintained at a constant 15 °C.
