Vineyard and terroir
The fruit comes from 20-year-old vines in Monforte d'Alba and Castiglione Falletto. The vineyards lie at 300–400 metres above sea level, with north-east and north-west exposures.
Vinification
The grapes are harvested by hand into small baskets and sorted at the winery. They are then gently pressed and cold-macerated for several days. Alcoholic and malolactic fermentation take place with native yeasts in small oak barrels.
Ageing
The wine rests on its lees for 12–15 months in small oak barrels, followed by a further 10 months in bottle in the estate’s cellars, maintained at a constant 15 °C.
