Vinification
Cabernet Sauvignon and Sangiovese are vinified separately. The grapes are harvested by hand in the second half of September at optimal ripeness, then sorted by hand and mechanically destemmed. After gentle pressing, they undergo 10–15 days of skin maceration. Fermentation takes place in stainless-steel tanks to retain aroma and freshness.
Ageing
The wine matures in French oak barrels for 24 months, developing greater depth and complexity of flavour and a richer bouquet.
Tasting profile
Berry aromas lead to a warming palate.
Serving and pairing
Pair with cured meats or a selection of cheeses.
Vintage notes
The 2022 growing season was particularly dry, with high temperatures from spring that could have adversely affected the harvest. The grapes consequently reached optimal ripeness slightly later than usual.
Label / history
The vivid label is created by a local artist and changes with every vintage, linking contemporary art with local winemaking traditions. The 2022 vintage was limited to 4,000 bottles.
