Grapes
Selected Italian wines make up at least 75% of the blend. White varieties from southern Italy, including Moscato Bianco (White Muscat), give a smooth taste.
Vinification
Low-acidity wines are first fortified with pure alcohol, then blended with botanicals, of which wormwood is the most important. This gives the vermouth its distinctive taste, colour and aroma.
The herbs and spices are grouped by category and infused separately in water and alcohol by a cold method, without being boiled first. The main botanicals are Pontic wormwood, savory, gentian, coriander, bitter orange, rhubarb, chamomile and elder. The fortified wine is blended with the infusions and sugar and left to rest briefly. It then spends 20 days in the cellar to clarify, and is finally filtered and bottled.
Label / history
The "Corsieri del Palio" brand belongs to Perlino S.P.A. The name celebrates the traditions of the historic city of Asti: a corsiero is a noble racehorse, and the Palio is a local horse-racing festival held in the region since the 17th century. The formula is based on traditional recipes that reflect the character of Piedmont.
Vermouth di Torino has had PGI (Protected Geographical Indication) status since 2017. It must be produced and bottled in Piedmont, from Italian base wines and Piedmontese-grown wormwood, and the finished vermouth must contain at least 16% alcohol.
