Grapes
The base is white grape varieties from Southern Italy, primarily Moscato Bianco (White Muscat). Selected Italian wines make up at least 75% of the blend.
Vinification
The herbs and spices are macerated in water or alcohol, each botanical infused separately. The base wines are then blended with alcohol, the aromatic infusions and sugar. The main botanicals are Pontic wormwood, juniper, St. John's wort and cinchona bark, which give the vermouth its distinctive taste, colour and aroma. After blending, the vermouth rests briefly, then moves to the cellar for clarification. It is finally filtered and bottled.

Label / history
"Corsieri del Palio" is a brand of Perlino S.P.A. The name draws on the traditions of the historic city of Asti: a corsiero is a noble racehorse, and the Palio is a local horse-racing festival held in the region since the seventeenth century. The vermouths follow traditional recipes designed to reflect the character of Piedmont.
Vermouth di Torino has had PGI (Protected Geographical Indication) status since 2017. It must be produced and bottled in Piedmont. The base wines must be Italian, the wormwood must be grown in Piedmont, and the finished product must contain at least 16% alcohol.
