Vineyard and terroir
The grape varieties used for the smoothness of the vermouth are sourced from southern Italy.
Vinification
Selected Italian wines make up at least 75% of the blend. The base wines are fortified with pure alcohol, then combined with bitter wormwood during a hot infusion and rested in a warm environment.
The botanical mixture also includes Tolu balsam; tinctures of myrrh, saffron and rhubarb; bitter and red orange peel; mace; cinnamon; and vanilla. Each herb and spice is macerated separately in water or alcohol. The resulting infusions are blended with the fortified wine and sugar. After a brief rest, the vermouth spends 20 days in a cellar tank for clarification, followed by filtration, tasting and bottling.
Tasting profile
The vermouth has a smooth taste. Its mixture of herbs and spices provides its distinctive aroma and colour.
Label / history
The Corsieri del Palio brand belongs to Perlino S.P.A. Its name refers to the traditions of Asti: a corsiero is a noble racehorse, while the Palio is a local horse-racing festival held in the region since the XVII century. The formula draws on traditional recipes intended to reflect the character of Piedmont.
Vermouth di Torino has held Protected Geographical Indication status since 2017. Its requirements include production and bottling in Piedmont, the use of Italian base wines and wormwood grown in Piedmont, and a minimum finished alcohol content of 16%.
The vermouth received a silver medal in the “Design: Best New Launch” category at the World Vermouth Awards and a gold medal at the Cathay Hong Kong International Wine and Spirit Competition in 2022.
