Vineyard and terroir
The Merlot vineyard is planted on a gentle, west-facing slope with gravelly sandy-clay soil.
Vinification
The grapes are harvested by hand and destemmed. Fermentation takes place in open steel vats for approximately 10 days, with the cap punched down twice daily. The wine then undergoes malolactic fermentation.
Ageing
Around 20% of the wine matures in new barriques, while the remainder ages in older barriques that have been used repeatedly. After 12 months, the wine is bottled and rests for a further 14 months before release.
