Vineyard and terroir
The 1.1 ha Iugum vineyard lies on the Magreid/Magrè hillside at 300–350 m above sea level, with eastern and southeastern exposure. It is among the warmest vineyards in Alto Adige and has clay-rich soil. These conditions led to the selection of Bordeaux grape varieties for the site.
Vinification
Merlot is harvested from mid-September and Cabernet Sauvignon from mid-October. The grapes are destemmed, crushed and vinified separately. Fermentation lasts 10 days in open wooden vats, with the cap punched down twice daily. Malolactic fermentation takes place in new barriques.
Ageing
After malolactic fermentation, the Cabernet Sauvignon remains in the new barriques for 12 months, while the Merlot matures for the same period in second- and third-use barriques. The final blend is then assembled, aged in concrete vats for 8 months and refined in bottle for 24 months.

First released in 1995, Iugum takes its name from the Latin word for “yoke,” the wooden beam used by a pair of oxen to pull a plough.
